7up Cake
Coke Salad
Cottage Cheese Salad
Microwave Peanut Brittle

German Style Spaghetti
Heavenly Sweet Potatoes
 


Snicker Doodles by:  Peggy O'Rourke
  Makes:   6 dozen
1 cup Crisco or Oleo
1/2 cup Sugar
2 eggs
2-3/4 cups of Flour
2 tsp. Cream of Tartar
1 tsp. Baking Soda
1/2 tsp. Salt
NOTES:  Mix all together thoroughly.  Chill dough overnight, then roll into 1 inch balls.  Roll balls in 3 tbs. sugar mixed with 3 tbs. cinnamon.  Bake on un-greased cookie sheet at 400 degrees for 8-10 min.

Praise God for food like this!  

 
Microwave Peanut Brittle
Given to me by Marilyn Lunberry
Makes Approx. 1 lb
1 C. granulated sugar 
1/2 C. white  corn syrup 
Stir together in a 1 1/2 qt microwaveable bowl, microwave 4 min.

1C. roasted salted peanuts  
Stir in peanuts, Microwave 3-5 minutes until light brown.

1 tsp. butter 
1 tsp vanilla   
Add to above mixture.  Blend well and microwave 1-2 more minutes.  Peanuts will be browned and syrup very hot.

1 tsp. baking soda  
Add baking soda and gently stir until light and fluffy.

Pour mixture onto lightly greased cookie sheet, let cool 1/2 to 1 hour.  Break into small pieces and store in air tight container.

Note:  If raw peanuts are used:  Before microwaving the first time, add to sugar/syrup mixture along with 1/8 tsp salt.

 
Heavenly Sweet Potatoes
3 c or 2 lg cans of Sweet Potatoes, well drained.  Mash thoroughly.
1/2 c sugar  
1/2 c melted butter  
2 eggs, well beaten   
1 tsp vanilla   
1/3 c milk   
Mix well and put into a greased casserole dish.

Mix together,  
1 c brown sugar  
1/2 c flour 
1/2 c butter.  
Add 1 c pecans, crumble over top of sweet potatoes and bake in a 350 degree oven for 25 minutes.

 
COKE SALAD
14 oz Coca Cola (a short pint)  
Small pkg Cherry Jello  
Small pkg cream cheese  
Small can crushed pineapple (drained)  
3/4 c pecans, chopped

Heat coke (almost to boiling point).  Add Jello and dissolve thoroughly - then add cream cheese in pieces so it will melt until only tiny pieces are left.

Let mixture cool for about 20 minutes and add pineapple and pecans.  Put in mold or any container and refrigerate until set.

I always double this for family dinners and have always served it for holiday dinners.  I don't know anyone in my family that does no do the same.  Recipe obtained from an old friend in San Antonio in 1938 - Livy

 
7 up Cake                       Diana Van Voorst
1 cake mix (with pudding or super moist)  Yellow, orange, vanilla, lemon, or pineapple   1 3 oz box instant puddin - vanilla, coconut, or pineapple  
3/4 cup of oil  
4 large eggs 
10 oz bottle of 7-up soda (or Sprite)  
1/2 cup chopped nuts (optional - walnuts, macadamia nuts, or almonds.
Preheat oven to 350 degrees.  Mix together the cake mix, pudding, oil, and eggs until the batter is smooth.  Gently fold in the soda and nuts.  Bake in a greased 9 x 13 pan for 45 minutes or until a toothpick inserted in the center comes out clean.
Icing:  
1 1/2 cups sugar 
1/2 cup margarine 
1 cup cocoanut 
2 eggs 
1 can crushed pineapple (about 8 oz) 
2 Tbsp flour
Melt the margarine either in a saucepan or in a mug in the microwave.  Add in the flour and stir until smooth.  Place the sugar, eggs, un-drained pineapple, and coconut in a saucepan.  Heat over medium heat.  As the mixture warms, add the margarine/flour mixture.  Continue stirring over medium heat until it begins to boil and thicken.  Pour the icing over the cooled cake and allow the icing to cool before serving.

 

 

Cottage Cheese Salad

1 large carton creamed cottage cheese
1 small can mandarin oranges, drained well
1 small package orange jello, (dry) 
1 small carton Cool Whip
Put all ingredients into a bowl and stir by hand until well blended.  Refrigerate.

I used "Sparkling Mandarin Orange Sugar Free Jello" and low fat cottage cheese and low fat Cool Whip when I brought it to a recent pot luck dinner and it received rave reviews.  I'm sure you could substitute any flavor Jello with a complimentary fruit.

 
German Style Spaghetti

Ingredients
2 lbs ground beef
1 large onion
1 green pepper
1 8 0z can mushrooms 
1 can ripe black olives, sliced  
2 large cans tomatoes 
1/2 lb cheddar cheese, cubed 
1 to 1 1/2 lb spaghetti
Seasonings 
salt 
pepper 
Lawry's Seasoned Salt 
dash of Tabasco sauce 
dash of garlic powder
Directions:  Brown meat.  Saute onion, green pepper and mushrooms in olive or other vegetable oil.  Add to browned meat.  Add tomatoes, seasonings.  Mix well.  Pour over cooked spaghetti, which may be chopped first.  Mix well.  Top with cubed cheese and sliced olives.  Bake at 350 deg. for one hour.
This recipe may be made ahead of time.  Cool and freeze.  When ready to bake, put in the oven still frozen and bake at 350 deg for 3 hours.
